In Italy, a true traditional sauce is composed of a few ingredients that do not overpower each other. Italian spaghetti sauce is made of only the basic fresh red tomatoes, minced fresh garlic and olive oil with a little salt and pepper. Some Italians also cook down carrots and onions on it then make a puree out of the ingredients for a nice aromatic sauce.
The most genuine and famous Italian pasta sauce is the spaghetti tomato sauce which they call "gravy." It is composed of extra virgin olive oil, fresh tomatoes, a good-quality meat and a fine red wine. Some use fresh herbs like basil, mint, oregano and parsley to enhance flavor. It's plain and simple - great Italian pasta sauces use fresh ingredients.
Begin by coating the bottom of a saucepan with olive oil. Add chopped or minced onions and cook until transparent. Add canned or fresh crushed tomatoes, whole or minced fresh garlic cloves, and a handful of fresh basil. After adding salt and pepper, a dash of sugar is oftentimes sprinkled to lessen the acidity of tomatoes. Bring the whole mixture into boil then reduce the heat to medium-low and simmer. Crush the tomatoes with a whisk until the sauce turns chunky and thick, about 20 minutes.
For my spaghetti, I just season the crumbled ground beef with salt, pepper, crushed fresh or dried oregano, basil, and minced onions as it fries, making sure I stir them well. When I drain the beef, I pour in my homemade sauce then blend well. I let it simmer while the spaghetti cooks. If there are leftovers, I mix the spaghetti and sauce together, warm it up, and add Cheddar cheese sauce, or grate fresh Romano cheese on top. It's great! To cook your pasta perfectly, you need a large pot and plenty of water. The next thing is to take note of one important rule - prepare pasta just before serving it.
