This is a fresh-flavored dessert recipe and it is guaranteed to thrill anybody you serve it to.

The Recipe - Step By Step
As you can see from the following recipe, this is not a difficult dessert to make at all. You will need three cake pans, which measure nine inches across. Check the cake is done by sticking a sharp knife into the center of it. If the knife comes out clean, the cake is done.
What You Need:
  • 1/2 cup butter
  • 1/2 cup shortening
  • 2 cups all purpose flour
  • 3/8 teaspoon baking soda
  • 1 2/3 cups white sugar
  • 6 eggs
  • 2 cups shredded coconut
  • 1/4 teaspoon cream of tartar
  • 15 quartered maraschino cherries
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 teaspoon salt
For The Frosting:
  • 4 cups powdered sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup butter at room temperature
  • 8 oz softened cream cheese
  • 1 cup chopped pecans
How To Make It:Preheat the oven to 350 degrees F. Cream the butter, sugar and shortening together until the mixture is fluffy and light. Add the egg yolks one at a time, beating the mixture well after adding each one. Add the dry ingredients and buttermilk alternatively, finishing with the flour. Stir in the pecans, cherries, coconut, and vanilla extract.
Beat the cream of egg whites with the cream of tartar, and then fold this into the cake batter. Bake it in three greased nine inch layer pans for between thirty and forty minutes, or until it is done. Let the layers cool for ten minutes then take them out of the pans.
Cream the cream cheese and butter to make the frosting, and then add the vanilla and sugar. Beat the mixture until it is creamy, and then add the pecans. Alternatively, you can sprinkle the nuts on top of the finished cake instead.
