Sausage and Peppers. Pronounce - Peppers and Sawzeech
This is one of the ultimate Italian dishes. At least it is here in the Northeast. It is totally simple to make and yet, I have never had a good sausage and peppers sub from a deli. Why? Well, sometimes when some thing is simple to make the person cooking it thinks that they can either make it better or the are doing something wrong. The key is good sausage. There are a couple of good supermarket brands of sauce is here in the New Haven area. Perri's is my favorite.
Ingredients:
  • 1 package of sweet Italian sausage.
  • 6 Peppers, green and red. Cut into thick slices
  • 2 Onions, white or yellow. Cut into thick slices
  • 6-8 Garlic Cloves. Coarsely chopped
  • salt and pepper to taste
  • Olive Oil if necessary
Fill a large skillet with approximately 1/4 inches of water.
Turn the heat to Medium/High
Pierce the sausage all over with a fork
Place the sausage in the water and allow it to poach. Turn them frequently
Once the Water Evaporates, the sausage will Brown. Brown thoroughly.
Remove the sausage to a paper towel.
When cool, cut the sausage into 1/4 inch thick rounds
If there is a lot of fat in the frying pan, remove some of it. Not all.
Place the peppers and onion in a frying pan, cover. Covering well allow the peppers and onions to the faster by steaming. After approximately 10 to 15 minutes, remove the cover and add the garlic. Toss everything. Add some salt and pepper to taste.
While the peppers, onions and garlic are cooking through, cut the sausage into pieces.
When the vegetables are about done cooking, add the sausage. Toss and allow to heat through.
At this point, the preface should be soft and some of them brown

Remember the recipe I gave for Gypsy Chicken? This Sausage and peppers recipe is eerily similar. Gypsy chicken was made when you had a bunch of ingredients, but only a small quantity of each. Sausage and peppers is made when you have a quantity of sausage and peppers.
