If you want to learn how to make Italian recipes than you're in for a treat, because I'm sharing some Italian secrets that will take your Italian dish from mundane to masterful. For instance, by adding a sprinkle of sugar to sauce you can remove the bitter, acidy flavor. Also, only use ground beef to make meatballs instead of ground pork, sausage, and beef. Once you master these authentic recipes, you'll never want to set foot in an Italian restaurant again.
The Sauce
You can't learn how to make Italian recipes until you know how to make the sauce, because it goes on just about everything. Sauce can be made two ways- fresh or from a can, but never from a jar.
To make a fresh sauce, wash, quarter, and blend about eight large beefsteak tomatoes, a small box of cherry tomatoes, and a small can of tomato paste. Add some parsley, basil, less than a teaspoon of sugar, and black and white pepper for a little kick. Blend until the desired consistency is reached.
Next, drizzle about a tablespoon or two of olive oil, depending on the size of the pot and how much sauce you are making, on the bottom of the pot along with chopped onions. Put the flame on medium and let the onions brown, stirring occasionally. Once the onions caramelize, add the sauce, let it simmer on low for at least two hours and using a wooden spoon, stir often. For a meat sauce, simply add the already cooked meatballs, Italian sausage, or braciole, which is a thin slice of Italian beef that is rolled and stuffed with breadcrumbs, cheeses, and seasonings.
Meatballs
Making meatballs is an Italian staple and is included in many of the how to make Italian recipes. To make meatballs, you must have:
  • A pound of ground round
  • Two eggs
  • Five to six slices of white bread with no ends, soaked in water, and rung out
  • About two or three cloves of garlic
  • Italian spices
  • Black pepper
  • A half a cup of Parmesan cheese
In a large bowl, mix all of the ingredients together with your hands and shape into medium size balls. Fill a frying pan about a quarter of the way with vegetable oil and heat on medium. Once the oil is hot, add the meatballs one at a time and fry until brown on the bottom and then flip over to cook the other side. Add more oil as it burns up as it should never cover less than a third of the meatball. When they are completely brown and crisp, place them on a paper towel to absorb the excess oil for several minutes, add to sauce, serve with pasta, and enjoy!
Spinach and Mushroom Manicotti
Even if you don't usually eat pasta, you will absolutely love this dish. It is one of the more time consuming efforts you will experience in learning how to make Italian recipes and requires a bit of multi-tasking, but its well worth the effort.
  • Start by preheating the oven to 350° Fahrenheit and heating a big pot of water on top of the stove.

  • In the meantime, put some olive oil in a pan, add some pressed garlic, finely chopped mushrooms, and a package of frozen spinach and cook over medium heat until the spinach is thawed and the vegetables are soft.

  • Once ready, transfer to a large bowl and add two eggs, 15 ounces of Ricotta, basil, half of a pound of fresh, mozzarella, some basil, black pepper, half a cup of parmesan cheese, and parsley. While you are mixing this, the manicotti shells should be boiling in the pot of water for the recommended time on the package.

  • Drain the shells and rinse with cool water so that you are able to handle and stuff the manicotti.

  • Cover the bottom of a baking dish with a thin layer of sauce, add the manicotti, more sauce, the remaining mozzarella, and a sprinkle of parmesan; tent with foil and cook for 30 minutes. Remove the foil and cook for an additional 5 to 10 minutes.
Serve hot, with a salad, some garlic bread and a glass of red wine and you'll think you're in Italy.
