How to Make an Authentic Italian Organic Pasta Sauce

As a girl, I lived in Italy savoring the authentic dishes and smelling simmering sauces on the stove tops. Now I'm going to give you a little secret on how to make an absolutely amazing, all organic and tasty Italian pasta sauce handed down to me from my Italian landlords that can also be used for pizza. Heck I even use it as a dipping sauce for bread - it's that good!
Okay, here's the simple recipe: Place 5-6 large tomatoes (doesn't matter what kind) in a large pot of cold water. Heat the water until the tomatoes start to simmer. When the peel looks like it's coming off then take the pot off the burner. Empty hot water and add cold water so you can handle the tomatoes. When the tomatoes are cool, peel off the skin. Place the par boiled tomatoes in a blender along with 1/2 cup extra virgin olive oil, 2 frozen cubes of garlic and 2 frozen cubes of basil (both from Trader Joes), or add 4 fresh basil leaves chopped up, and about a teaspoon of chopped fresh oregano, and sea salt to taste. If you like it arrabiata (spicy hot), add 2-4 fresh Thai red chili's. Blend just until everything is mixed. Store or heat up for immediate use.
Now if you want a thicker sauce, then forget about organic for a moment (unless you use organic canned tomato sauce), and instead of using the 5-6 large tomatoes, then add three 15 oz. cans of Hunts tomato sauce to the blender, 2 cubes garlic, 2 cubes basil, 1/2 teaspoon fresh oregano, 1/3 cup extra virgin olive oil, sea salt to taste and again if you want it spicy hot then add 2-3 fresh Thai red chilis.
After you make this sauce you'll be able to customize the amounts of tomatoes and/or tomato sauce combination, olive oil, garlic, basil, oregano, sea salt and hot chili peppers to taste. What you'll notice is the amazing blend of these ingredients that will give you the best tasting pasta sauce you'll ever have. Please let me know what you think after you've made this sauce yourself.
