Authentic Italian Cuisine: Tips for a Real Italian Meal

When visiting Italy, you can expect to find a unique blend of foods that are nothing like what typically passes for "Italian" in American cities. Chef Boyardee canned spaghetti is not authentic. Pepperoni and cheese pizza is not authentic. Even boiled angel hair pasta with a plain tomato sauce is not authentic Italian cuisine, particularly if the noodles are soft and the sauce comes from a can.
The basis of a pure Italian meal is in its ingredients. Buy fresh and buy quality and plan to prepare it the same day you purchase it.
Pasta
You can get away with purchasing boxed pasta for an authentic Italian meal; however, to truly capture the true spirit of Italy, you should try to make your own. You do not need a pasta maker to do this. Many Italian families make everything from spaghetti noodles to ravioli by hand without the use of a machine.
For ravioli, for instance, simply find a good recipe for the noodles and roll it out on a flat, amply floured surface. Coat the rim of a glass in flour and cut circular-shaped pieces of dough. Remove the excess and add a cheese mixture of mozzarella and ricotta cheese to the center of the circles. Wet along the edge of half of the circle and press the two sides together, pressing the edge with a fork to seal. The water will help seal the dough and the fork impressions will keep the dough from opening during cooking. Repeat these steps until you run out of cheese mix or dough. If you have extra dough, simply cut thin strips in the flattened dough to make spaghetti noodles.
When cooking pasta, do not overcook it. Soft pasta is not typical in Italy. Instead, Italians prefer "al dente" noodles. Literally, this translates to mean "to the tooth" or "to the bite," because the pasta retains its firmness and must be chewed, rather than soft pasta, which breaks down easily. Al dente pasta is especially important in meals like lasagna, which require double cooking (boiling the noodles and then baking the lasagna).
Garlic
No Italian home is complete without at least one strand of garlic hanging in the kitchen. Fresh garlic is used in many meals and even dried and ground to make garlic powder. The cloves stay remarkable fresh for long periods when kept in the bulb and used as needed. Italian cuisine uses fresh garlic in many recipes.
Bread
Homemade fresh bread is an important part of any Italian meal. Bread can be served simply with butter for dipping in the sauce of the meal, whether a white Alfredo-style sauce or a red tomato or meat sauce. Bread is also often coated in sea salt or dipped in olive oil while still warm.

Tomatoes, cucumbers, and other salad vegetables are coated with a simple oil and vinegar dressing, which is also often homemade. In true Italian homes, the salad is served after the meal.
